When I was a teenager, the 3 p.m. movie channel had "Intermission" which is equal to today's Dinner and a Movie on cable. During the "Intermission" they would interview different people and this one time they interviewed "The Colonel". He was just starting his KFC business. He had retired at age 65 after being a cook in someone else's business. He decided at that age to start his own business. He cooked his chicken during the "Intermission" and used a special pressure cooker that takes oil (a normal pressure cooker can't handle that). He cooked his chicken in just 7 minutes. He used 11 herbs and spices. When he sold his KFC business, they changed his recipe and he wasn't happy - that was before they even added the crispy which he totally hated. I found a recipe from Secret Recipes that says a woman - as he was coming out of court regarding the new business changing his recipes and making his personal recipes sealed and not available to anyone - showed him a piece of paper stating the herbs and spices he used and he said she was pretty close. The recipe I have has you cook the chicken in the oven - which is totally different than what the Colonel did. But it does produce a very moist piece of chicken. I have done it with pork, chicken and fish. All came out very nice. But, it's not the Colonel's recipe. I don't think anyone will ever get his recipe. The recipe I have takes a package of Italian Salad dressing - the powder, a package of tomato cup-of-soup, and self-rising flour. It's very difficult to get a package of tomato cup-of-soup these days so you might not be able to make it. Between those two packages, all the herbs and spices are there - or so said the Colonel. Mix together the two powder packages with 2 cups of the self-rising flour. Wash off your chicken, dip it in the flour mixture inside a zip lock bag. Set it aside for 15 minutes and dip it a second time. Then place it in a casserole dish that has about 1/4" of melted butter in the bottom. Turn the pieces over to coat with the butter and bake at 350º for 30-40 minutes or until the chicken is done.

I cant give you the recipe but heres the little i know about it.

They brine the chicken for about 15 minutes before cooking it.
The Original chicken is cooked in a pressure type cooker.
The Krispy is dunked in a milk water and then rolled in flour and deep fryed.

I've almost got the seasoning down, but i've never measured. I take the flour and add lots of herbs and spices..( remember its 11 herbs and spices) I also crush a chicken cube into the flour. The Colonel got it right when he came up with the secret spice.
