i enjoy chicken in peanut sauce at chinese restraunts as i travel around the country.unfortunately,the ones around my towndont make it.can anyone help?

PEANUT BUTTER CHICKEN OVER RICE
(AFRICAN ORIGIN)

Fried chicken, approximately 1/2 cut in pieces
1 1/2 tbsp. peanut butter
1/2 sm. onion, diced
1 sm. tomato, diced
1 tbsp. butter
1 tbsp. oil
2 c. rice, cooked
1 c. hot water

Melt butter and oil into saucepan. Saute onion and tomato until soft and 1/2 tablespoon of peanut butter in saucepan. Add hot water and bring to a boil, stirring constantly. Lower heat to a simmer, add chicken and continue to simmer 6 minutes. Cover and serve over cooked rice.

I am so glad you asked this question. This is my favorite recipe. When we first had them, we melted. I served these last month at our wine tasting event and everyone RAVED. I hope you like them as much as we do. If you don't them on skewers, I would just use chicken breasts and flatten them out a bit before marinating them. You could even do strips too and serve over rice. Yummy!

Ingredients:
1/2 cup creamy peanut butter
1 cup coconut milk
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 1/2 tablespoons dark brown sugar
1 teaspoon ground ginger
2 garlic cloves, chopped
1/2 teaspoon red pepper flakes
2 lbs chicken cutlets
30 wooden skewers, soaked for 30 mins

Directions:
mix first 8 ingredients, remove 3/4 and refrigerate.
cut chicken into strips and marinate in remaining sauce for 1 hour.
heat broiler, thread strips onto skewers and broil about 6 minutes.
bring refrigerated sauce to room temp and use as a dip for the chicken.

Whole Wheat Pasta with Cucumber and Spicy Peanut Sauce


3/4 cup creamy peanut butter
3 tablespoons soy sauce
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon dried hot red pepper flakes
1 teaspoon sugar
1 cup hot water
20 ounces whole wheat pasta
2 cucumbers, peeled, seeded and cut diagonally into 1/8-inch slices
1 cup thinly sliced scallions
1 cup red peppers, thinly sliced and 1 inch in length
salt and pepper to taste

In a blender combine the peanut butter, soy sauce, lemon juice, garlic, red pepper flakes, sugar and hot water until smooth. In a pot of boiling salted water, boil the pasta until just tender; transfer to colander and rinse briefly under cold water. Drain the pasta noodles well. In a large bowl, toss noodles with peanut sauce, cucumbers, scallions and red peppers. Add salt and pepper to taste. Serve immediately at room temperature. Makes 8 servings
