To long to list. Get a book by Scott Cunningham, his herb book. If not then most any author will do as long as they are of a Pagan belief.

There are literally hundreds, if not thousands, of herbs, spices, and other plant matter used in ritual. You would have to be more specific, either by saying something like, "What are herbs x, y, and z used for," or, "I'm doing a protection spell, what herbs would be appropriate."

Yow. I second JP, there is too much to know and more than anyone can post here.

I would like to add that while certain herbs tend to be used for certain things, ultimately they mean what they mean to you. It's all from within.
