Because the reason God has always been is that He lives outside of time. He created time, the universe, and all of the laws of our vast universe. I understand that it is difficult for someone who hasn't read several books on the subject to comprehend the concept that God created "time," but if you can grasp it, it makes understanding how God is the way He is a lot easier. For example: living outside of time implies absolute knowledge, absolute power, and the ability to be everywhere at the same time. If God did create time, if He lives outside of time itself, it makes perfect sense that He should be omnipotent, omniscient, and omnipresent. The universe is just another one of his creations. It had a beginning. I hope this fully explains why the universe has not always been.

Extrapolation of the expansion of the universe backwards in time using general relativity yields an infinite density and temperature at a finite time in the past.
The early hot, dense phase is itself referred to as "the Big Bang", and is considered the "birth" of our universe.

Those aren't the only two choices.

I'm reminded of that scene in the movie, 'Chicken Run', when the leader chicken says, "We'll either die free chickens or die trying!" And the dumb chicken says, "Are those the only two choices?"
