I've tried them all and they all work- for awhile then stop.

I'm thinking of doing the use one day then off two days using regular shampoo inbetween.

I use a ph balanced regular shampoo.

Any advice on what dandruff shampoo to use 2 or 3 times a week?

A herbal rinse is a safe method of removing dandruff. Apply lemon juice with the rind on the scalp .After 5 minutes wash off with shampoo and water. More simple remedies at http://usefulinfo-dandruff.blogspot.com/

I'd say to use selson blue, it worked the best for me. They have it in moisturizing and medicated and something else.
