She may be craving spinach because her body is low in calcium by not drinking milk. Spinach has about the same amount of calcium in it as a glass of milk, but the body cannot absorb it. This lack of calcium may seriously effect her in later life with weak bones.

Try increasing her intake of other dairy products such as cheese, cottage cheese or even ice cream. Check the calcium content on alternative milks such as soy milk and rice milk. I know some have very high sugar content. How about giving her a fortified cereal with milk?

It is very possible to raise a healthy vegetarian child, but strict attention must be paid to her diet to make she does not develop any deficiencies, especially once she begins menstruation. I was raised to not eat red meat, and over time I have developed a noticeable vitamin b, iron, and fatty acid deficiency. I also have inherited blood sugar problems, and without the steady source of protein and iron that come from red meat, it has been quite difficult to control. I have recently begun to take supplements for these issues, and they have helped a lot without having to add meat. So make sure she is eating enough protein throughout the day (in the form of beans-especially lentils-, nuts, and substitute meat products- such as seitan, tempeh, and soy) and also getting enough of the vitamins that are usually supplied by meat products. If she is an octo-lacto vegetarian, cheese and eggs are an important protein supplement, but with the amount of cholesterol they contain, try to contain them to only a few times of week. Milk is a very important source of Calcium (very important in a kid!),so if he does not like it you should find another one or even a milk product he fancies to ensure he is taking the recommended daily intake of calcium for his age. However, the spinach are linked to the problem, they are a good food (rich in iron), but they have a secondary effect and that is that they impede normal calcium absorption.
