My sister has requested a small but special "Happy Hour" celebration at my home for her birthday (apprx 6-8 people). What are some awesome but simple drink recipes?

There are a couple of simple yet well received drinks, aside from obviously having beer & wine available. I recommend:
Vodka (nothing of lower quality than Skyy), mixed with cranberry, pineapple juice and club soda (do more cranberry than pineapple, and more club soda to make it less sweet (or less club soda to make it more sweet).

The other is a Mojito. If you don't want to do the version from scratch, go to the freezer section and buy Bacardi Mojito mix. Then you add Rum (not the dark kind) and for an extra special touch, add real chopped mint from the produce section.

Margarita

You need a 16oz (pint) beer glass to mix in and shaker glass that fits inside, i.e. like at a bar.

You can use either more 16oz beer glasses to drink from or get margarita glasses.

Get either margarita salt or course ground kosher salt (same thing). Rub a lime around the edge of the glasses your going to drink from and rim with the salt.

You need good grade of tequila (Jose Cuervo Traditional is my recommendation) for a smooth margarita. Triple Sec and any brand margarita mix.

You mix the drink in the pint glass. First fill the glass with crushed ice or very small ice cubes, fill it all the way to the top with the ice. Add 2 jiggers tequila (3 oz), 1 jigger triple sec (1.5 oz) and top off with the margarita mix. If you do this right, the two liquors will fill the glass 90% of the way. The margarita mix basically adds color. Cover with shaker, shake and pour into the salt rimmed glasses. Add a lime slice for garnish.

These are really really easy to make and really good. All my friends say I make the best margarita. The key is to get the proportions right.

Rum and Coke. Vodka and Orange or Cran juice. Gin and tonic.
A little fancier drink:
Lemon Drop Martinis! Hand squeezed lemonade and lemon flavored Vodka in a 3-1 ratio (depending on how strong you like it)
Don't forget the wine!
Good luck and have lots 'o' fun
