Use skinless boneless chicken breast and pound it thin. Dip it first in flour THEN egg, then bread crumbs that are mixed with salt. Add seasonings if u like. Fry both sides in olive oil and voila.

Absolutely. I second going to Recipezaar for some recipes. What I would do is get 1 lb ground chicken meat, add some salt, pepper and some chicken seasoning, along with 1/4 to 1/2 cup italian seasoned breadcrumbs and 1/4 to 1/2 cup parmesean cheese. Roll into balls, and flatten out into patties. Grill, fry or broil each patty, let them cool and then individually wrap them and place in the freezer (or eat immediately). When you want a sandwich, thaw them out in the fridge, reheat in oven or microwave, add some cheese, a tomato slice and some honey mustard dressing and you have yourself a homemade chicken patty sandwich. Now you got my thirst buds going crazy! Enjoy!

use boneless, skinless breast, your favorite seasoning flavors, such as teriyaki, barbecue, lemon pepper, spicy hot sauce
roast or grill
i like to put individual breast in a foil packet with different seasonings in each one so i have a variety to use for the week.
i usually just bake them in the oven and go ahead and throw in baking potatoes or sweet potatoes at the same time since the oven's on i have a meal.

I would take chicken breast and flatten them with a tenderizing mallet, and then cook them with what ever spices you like with your chicken.
