I'll make it simple..
when you eat, you do so to get energy.
so, there are 3 kinds of food: carbs, protein and fat. In 1g of ether carbs or protein there's 4 calories of energy, in 1g of fat there are 9 calories of energy. when you eat fatty foods, it's easier to eat more calories than you should, and the unused calories get stored in your body as fat.

proteins, when digested, have to be dissolved into carbs, and then into energy- so the process is longer, and you feel less hungry after eating them. and you have a better chance of spending the calories before feeling hungry again.

carbs get dissolved immediately into energy, they are the quickest to digest, so you basically eat carbs to get energy fast, but the full feeling doesn't last long. so you eat more. and the unused calories become fat.

bread and pasta are carbs. keep in mind, though, that not all carbs are equally bad..simple carbs (candy and white bread a.k.a. sugar) are bad because if you don't spend their energy quickly, they turn into fat to store it. complex carbs (brown bread, rice etc.) are good.

edit: if you want to eat healthy, your diet must be balanced.
try avoiding simple sugars and too much fat. eat more veggies than fruits, but lots of those also:)

There is very very little fat in bread or pasta. White bread or white pasta is mostly simple carbs (starch). There are a lot of misconceptions about this. Starchy foods do not have a lot of nutrition but they aren't that bad either.

If you want to be healthier, eat whole wheat bread (or other whole grains) and whole wheat pasta (yeah you can get that) and those complex carbs are better for you and they have more vitamins, minerals and fibre too.

Bread and pasta will not make you fat - its what you put on them that you should be thinking about.

The only fat in bread (not pasta which usually has none) is from the oil or lard that is used to make it.. which is very little.
