I've had this happen to me before, where a Target employee signed me up for one of their cards without asking me. Just call the company that issued the card, and cancel your service immediately. If you act quickly enough, the event will never even go through the system and be reported to credit agencies.

First, you need to stop worrying that someone will be mad if you don't buy whatever they are offering. Practice saying "no, thank you". You will save yourself a whole lot of problems.

Second, cancel the credit card via letter. You don't have to give them a reason if you don't want to. Request written confirmation that the account has been closed. Keep copies of both letters with your important financial papers. Sometimes closed accounts come back and bite you.

Are you really saying "Don't want to charge?" Don't be concerned that a credit card will get mad at you. Being responsible for your finances in very important. Some people just have the cards for emergencies. It will not go against you to not charge; they may eventually cancel it if you don't use it. But, if you don't use it you don't need it. You can cancel or stop it.

It's okay. You're allowed to have multiple credit cards. I have many store cards that I very rarely use, plus I have several visas and a few mastercards, plus discover and american express. I only use a few of them at any given time.
