Basic Fluffy Biscuit Recipe
Ingredients:
2 cups pastry flour
1 tablespoon baking powder
3/4 cup milk
1/4 cup olive oil
1. Preheat your oven to 350 degrees Fahrenheit. Mix the pastry flour and baking powder together in a small bowl. Then pour in the milk and oil. Stir until the flour mixes completely with the liquids.
2. If your mix is still a bit doughy, sprinkle in a little bit more flour, and mix with a fork until you can handle the dough with your hands.
3. Oil a pizza pan or a plain cookie sheet, then roll your dough out onto the oiled pan. Use a biscuit cutter (or just a household cup) to cut your dough out into as many biscuits as you need.
Hint: The biscuits will be much fluffier if the dough isn’t rolled down really flat. Roll the dough out so that the top of the dough is a half an inch to an inch above the pan, before you cut the dough into biscuits.
4. Slip the biscuits into the oven, and bake on 350 degrees Fahrenheit for 18 to 20 minutes, or until golden.

1 cup rice flour
1/2 cup tapioca flour
1/2 teaspoon xanthan gum
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4-6 tablespoons ghee (Clarified Butter)
1/2-3/4 cup rice milk or soymilk
1. Mix dry ingredients.
2. Cut in 4 tbs of the butter. If a more moist dough is desired add up to 2 tbs more.
3. Add rice or soy milk and mix.
4. For a traditional biscuit add 1/2 cup of milk.
5. For a drop biscuit add up to 3/4 cup of milk.
6. The rice flour will soak up a lot of moisture, so more milk may be needed to maintain the consistency.
7. For traditional biscuits roll to 3/4 inches thick and cut.
8. For drop biscuits drop 1 tbs of batter onto cookie sheet.
9. Bake 10-12 minutes at 400°F.
10. Note: Baking with these substitutions will differ greatly from traditional recipes, especially in concern to higher moisture content needed to deliver a moist biscuit after baking and consistency due to the moisture content when handling.

There will be NO dinner roll recipes where the dinner roll looks and feels like a dinner roll that is without yeast. Savory scones and biscuits are acceptable replacements for dinner rolls. There are some recipes out there but I see that they do contain gelatin... I would rather have a biscuit.

I'm almost sure that Bisquick does not contain yeast and there is a recipe right on the box. I have made them with cheddar cheese and garlic and they are delicious, yet easy to make. The key ingredient is baking powder, not yeast. Good luck and enjoy!

Biscuits
Serving Size: 12
1 cup sorghum flour
3/4 cup GF Flour Blend
1/4 cup Sweet Rice Flour
1 teaspoon xanthan gum
2 teaspoons sugar
3 teaspoons baking powder
1/2 teaspoon cream of tartar
¼ teaspoon salt
½ cup shortening -- cubed
1 egg
1/2 cup milk
Crack egg into large measuring cup. Add milk to make 2/3 cup of liquid. Lightly beat together. Set aside. Sift all dry ingredients. Place in food processor. Pulse in cubed shortening. Add milk/egg mixture. Pulse until dough is formed. I usually wrap dough in plastic wrap and chill 1 hour or overnight, but you could roll or pat it out right away and use a biscuit cutter to cut biscuits. Place on baking sheet and bake at 450 degrees for 10 min. Brush melted butter on them the last couple of minutes. This helps them to brown a little bit better.

Southern Biscuits
Ingredients:
2 cups gluten-free flour mix*
1/3 cup + 1 tablespoon butter
2 ½ teaspoons gluten-free baking powder
1 teaspoon Ener-G egg replacer
If using unsalted butter - 1 teaspoon salt
Directions:
Blend all ingredients with pastry cutter until butter is well distributed and in tiny pieces. Then add:
¾ cup milk (Goat milk, rice milk works too)
Stir really well until dough forms a ball. Let sit for a few minutes. Drop by spoonfuls or roll out and cut with a biscuit cutter. Bake at 400F for about 10 minutes.
*Gluten free flour mix is 2 cups brown rice flour, 2/3 cup potato starch flour, 1/3 cup Tapioca flour and 2 ½ teaspoons xanthan gum. Sift at least 3 times.
