Depending on your age, qualifications and citizenship, some good options are Peace Corps, CUSO, CIDA and VSO.
Do a search for "international volunteering" or "volunteer overseas." There are websites that have lists of volunteer organizations around the world and you can look from there.
www.volunteer.org.nz - Global Volunteer Network is a New Zealand based operation that has *great* prices (best I've found) to volunteer overseas and they have programs all over the world. I've heard great things about them.
