I'm looking for some new healthy vegan salad dressing recipes.
Do you have a favorite recipe that you can share??

All I do is Olive Oil and lemon juice with salt and pepper...
It's simple and it tastes good :]

I figure having vegan thousand island dressing on hand is always a good idea because it goes well with tempeh reuban sandwiches...yumm! Heck...its good with tofurky slices if you don't have the tempeh.

Vegan Thousand Island Salad Dressing Recipe

INGREDIENTS:

* 1 cup vegan mayonnaise (like Vegenaise)
* 1/3 cup ketchup
* 1/2 tsp onion powder
* dash salt
* 3 tbsp sweet pickle relish

PREPARATION:
Whisk together all ingredients in a bowl until smooth and creamy.

I love peanut salad dressing. This is the recipe we use:

* 1/2 cup canola oil
* 6 tablespoons rice wine vinegar
* 6 green onions, thinly sliced
* 1/4 cup chopped peanuts (or peanut butter)
* 1/4 cup sesame seeds, toasted
* 1/4 cup sugar (brown or natural is good, too)
* 1 1/2 teaspoons salt
* 1/2 teaspoon pepper

DIRECTIONS

1. In a jar with a tight-fitting lid, combine all ingredients; shake well. Store in the refrigerator.

Orange Sesame Vegan Salad Dressing Recipe
INGREDIENTS:
1 tbsp sesame seeds
2 tbsp rice vinegar
1 tbsp orange juice concentrate
1 tbsp water
PREPARATION:
Heat oven to 400 degrees and toast the sesame seends.
In a blender, food processor or coffee grinder, grind the toasted sesame seends into a powder.

Check out some of the recipes in "Garden of Vegan" by Sarah Kramer and Tanya Barnard or "La Dolce Vegan" by Sarah Kramer. There are some awesome salad dressings in both cookbooks.

If you like creamy dressings begin w/1 pkg. soft silken tofu, add 1 tsp. garlic and onion powders (or to taste), 1 tablespoon dried chives or fresh even better, 1 tablespoon parsley flakes (optional), and a tablespoon of lemon juice, dash of salt. Cream w/wire whip and refrigerate, the longer it sits the better the flavor as spices saturate tofu. Simple, healthy and tastes like ranch flavor milk based dressings.
