You can also use egg replacers. Ener-G Egg is a powdered mix of starches and leaveners. You use 1/2 tbsp replacer and 2 tbsp of water per egg. Mix it before adding it to the batter.

In her cookbook "Vegan With a Vengeance," Isa Chandra Moskowitz lists numerous egg replacers. And almost any good vegan cookbook will tell you how to replace eggs in baking.

They'll also have some pretty good egg-free cookie recipes.

instead of oil and eggs, buy a cookie mix like sugar, ginger, ect. any "plain" and mix in a can a pumpkin pie mix. soooooo good especially around halloween/thanksgiving. you can used mushed up bananas (good with chocolate chip!) or applesauce.

How about you tell your freind to quit being an idiot and eat eggs. Anyone who takes the humane approach to animals is a complete idiot and does not realize how much the United States depends on our agriculture for support. Without it all the vegetarians would find something else to B**** about.
