I was given a load of tree fallen apples which I peeled, chopped and placed in the freezer to use for cooking at a later date. The apples have gone a bit brown like they do when they have been peeled and left for a while. Do you think they will still be ok to use??

They will be fine. Next time, as you peel and slice them, have a bowl of cold water with a few drops of lemon juice in it, and put them in there until you get ready to bag them for the freeezer. That will prevent them from turning brown,

Should be ok! Next time might try vacuum packing them before freezing them.

yes, you can then you could dip it in caramel and eat it.
