Pumpkin Soup Recipe
1 (6 to 8-pound) pumpkin
1 cup toasted croutons
4 ounces grated gruyere cheese
salt & pepper to taste
a grating of fresh nutmeg
3 quarts (12 cups) cream or milk
Cut top off pumpkin so that it can be used as a soup tureen & set top aside. Remove seeds & alternate layers of croutons & gruyere. Add salt, pepper, & nutmeg. Fill w/ cream or milk. Close the "tureen" as tightly as possible w/ the top of the pumpkin. Place in a large, deep baking dish & bake in a 425°F oven for 2 hours. Present the pumpkin at the table, remove the top, & using a spoon scoop out some of the flesh of the pumpkin & mix it in w/ the soup, serving each diner some of the pumpkin along w/ the soup. Serves 8 to 12.

Just split them down the middle, scoop out the seeds, place them scooped side down on sheet pan with a half inch of water, 3 bay leaves black peppercorns, thyme, rosemary and sage. Roast the pumpkin at 375 until nice and soft. Scoop out the pulp and saute' onions, garlic, celery until soft, add pumpkin pulp and chicken stock to cover by 4 inches and simmer for 1 hour. In another pot crisp up some chopped pancetta, a little more onion, wilt some chiffonaded escarole and add some cooked cannellini beans, add the pumpkin puree and bring to a slow simmer again. Here's a good recipe.
Another idea, though, is to make just a 'dinner' in a pumpkin. Ingreds are ground beef, cooked rice, cream of mushroom soup, onions, celery. Cook all together and put in cleaned out pumkin. Bake at 350 for abt an hour and serve scooping out some pumpkin with each spoonful. Anyway, here's the soup:
Creamy Pumpkin Soup
2 cups finely chopped onions
1/2 cup finely chopped celery
1/2 cup butter
3 cans chicken broth - 14 oz. each, regular or low-fat,
or, about 6 cups of homemade chicken stock
2 cups pumpkin puree or 1 can of pumpkin (16 oz)
1 can evaporated milk - undiluted, regular or skim
1/4 cup grated parmesan + additional for topping
1 bay leaf
1/2 tsp. curry powder
1/4 tsp. ginger
1/4 tsp. nutmeg
1/8 tsp. chili powder
salt and pepper to taste
Preparation -
In a large saucepan or stockpot, very lightly saute onions and celery in 1/4 cup butter. Cook until onions begin to look translucent. Add broth, pumpkin, evaporated milk, parmesan, spices and bay leaf. Bring to a boil, stirring constantly. Reduce heat and simmer, uncovered for 20 minutes, stirring occasionally. Add salt and pepper, if needed. Stir in remaining butter.
Pour hot soup into the prepared pumpkin shell. Top with grated parmesan cheese and chopped fresh chives if desired.

My recipe for pumpkin soup is not from any other websites but of my own experience; which i make at my restaurant.
1)DO NOT use flour in the soup - replace it with potatoes for thickening.
2) Add little bit of fresh green chillies & a small amount of ginger.
3) Finish the soup with double cream BUT before serving top the soup with pernod-creme fraiche.!

i got a very good recepie.... hope ur mother will like it.
here it goes....
100 gram pumpkin pieces boiled with 250 ml water then cool it. and sieve it . in empty vessel put i tsp butter, 1 tsp plain flour and saute. then add pumpkin stock. boil it . add salt and black pepper and garnish it with coriander leaves. and serve it hot hot!!
