well this is like my second year of college and I wanted to know if anyone has any ideas to make a good heathy dinner in a microwave. becuase unfortunatly we are not allowed anything other than a microwave ex. a grill, hot plate, anything. I had a cool little steamer that would cook meats, veg, a bunch of stuff, but after I dropped out for a year I haven't been able to find anything like it. anyone have ideas? thanks

There are heaps of things to be done in a microwave heres a few of the recipes i have tryed and loved... Hope they help xoxo

Microwave Lasagna

1 (30 ounce) jar spaghetti sauce
1 lb ground beef
6 lasagna noodles (uncooked)
8 ounces shredded mozzarella cheese
16 ounces cottage cheese or ricotta cheese (combination of the two)
parmesan cheese

Brown the ground beef, mix with spaghetti sauce and 1/2 cup of water.
Set aside (I do not always use meat).
In a large deep rectangular microwavable pan, pour 1/4 of the sauce.
Layer 3 noodles on top and spread 1/2 the cottage/ricatto cheese on top of this.
Sprinkle with parmesan and 1/3 of the mozzarella.
Pour 1/2 of the remaining sauce mix on top and put the last 3 noddles top of the sauce.
Sprinkle with parmesan and 1/3 of the mozzarella.
Pour on the remaining sauce.
Cook on high for 8 minutes, medium for 25 minutes.
Sprinkle on the remaining mozzarella, and cook an additional 2 minutes.
Let stand for 10 minutes before serving.


Microwave Meatloaf

MEATLOAF:
1 1/2 lbs ground beef
1 (8 ounce) can tomato sauce
1 egg, lightly beaten
1 cup quick-cooking rolled oats
1 tablespoon instant minced onion
1/4 teaspoon garlic powder
1 1/2 teaspoons salt
1/2 teaspoon pepper
SAUCE :
1/3 cup ketchup
1 teaspoon worcestershire sauce
1 tablespoon brown sugar
1 tablespoon mustard

Combine all the meatloaf ingredients.
Pat into a microwave safe loaf pan.
Cook for 7 minutes on full power in the microwave. Blot the grease.
Whisk together the sauce ingredients, and spread over the top of the loaf.
Microwave on high another 5 minutes.


Microwave Brownies

2 eggs
1/2 teaspoon salt
1/2 cup butter
1/2 cup cocoa
1 cup sugar
3/4 cup unsifted flour
1 teaspoon vanilla
1 cup nuts of your choice (optional)

Beat eggs, sugar, salt, and vanilla.
Add butter, flour, and cocoa.
Fold in nuts.
Put in 8" microwave safe pan.
Cook on high power for 6 -7 minutes rotate every 1 - 1/2 minutes.

Bug, You can cook almost anything in a microwave, you just have to experiment with how much time to give it.

Keep a roll of white paper towels or napkins to put over the food you nuke. The colors on paper towels are not food-safe, so white is all you can use. The paper towels help hold in moisture when cooking. They also help the inside of the microwave clean. Food pops a lot in microwaves, so when you put paper towels over the top of the bowl or plate you are cooking it on, most of the mess stays there.

If you want to try steak, use thin ones to start with. Chicken parts do well, but I'm not happy with whole chickens in a cheap microwave. I like to do BBQ sauce on most of my nuked meats.

By the way, the microwave should have a book with recipes in it. The way I learned to try a variety of foods out in my microwave was to copy frozen dinners, sort of. It's all experimentation. Try the kitchen department of a hardware store or a microwave store, not a department store kitchen department. See if you can find a rice cooker, It will do double duty as a steamer.
Any microwave safe dish covered in wax paper will cook anything microwaveable! (It's also bio-degradable whereas that plastic wrap is not and will put plastic in your food.)
Microwaves were rare and expensive when I was in college. We made do...I lived on refried beans and cheap cheese from the bent can store one semester. Fruit and cheese are always a good fresh meal. Enjoy your college years!

my roomie and i lived on this in university....the dorm room micowave sure brings back memories. we used to put a cup of rice in a microwave safe casserole dish and a cup of water then lay a couple of boneless skinless chicken breasts on top and pour a can of mushroom soup over the whole mess. we cooked it for twenty or twenty five minutes and it sounds pretty terrible but it tasted pretty good (you can throw and old veggies you like in the bottom layer with the rice too)

SPINACH RICE HAM BAKE (Microwave)

8 oz. Velveeta or other processed cheese, cubed
1/2 c. milk
3 c. cooked rice (use Success rice and cook in microwave)
2 cups cubed fully cooked ham
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry

In a microwave-safe bowl, combine the cheese and milk. Microwave, uncovered, on high for 2 minutes or until cheese is melted; stir until smooth. Stir in the rice, ham and spinach. Transfer to a greased 1-1/2-qt. baking dish. Cover and bake at 350 F. for 25-30 minutes or until heated through.

DORM ROOM CASSEROLE (Microwave)

4 c. water
4 Oz. spaghetti
1 (10.75 oz.) can reduced fat reduced sodium condensed cream of mushroom soup
1 (10 oz.) package frozen broccoli florets
1/2 c. French fried onions

Place 4 cups water in a 2 quart microwave-safe dish. Heat on high until bubbling, about 15 minutes. Break pasta in half, and drop into heated water. Microwave on high for 10 to 15 minutes, or until tender. Drain and set aside (keep warm). Cook broccoli according to microwave directions. Add cooked broccoli to noodles, reserving liquid. Stir in 1/4 cup fried onions and mushroom soup. Add reserved broccoli liquid. Toss thoroughly, and top with remaining onions. Cover, and microwave on high about 15 minutes, or until top is crunchy. Let stand for a few minutes.

CHEESY NOODLE CASSEROLE (Microwave)

1 cup boiling water
1 (3 ounce) package any flavor ramen noodles
1 (3 ounce) can water-packed tuna, drained
2 slices American cheese

Pour water into a microwave safe bowl, and cook in the microwave until very hot, about 2 minutes at high heat. Add ramen noodles, and microwave 2 minutes more to cook.
Drain and discard water from noodles, then stir in seasoning packet, tuna, and American cheese. Place back into microwave, and cook until hot, 1 to 2 minutes more. Stir before serving.

EDIT: Are you allowed to have a crockpot?

That sucks ..so how can you actually eat like meat now and veggies and stuff like that ..well microwave i don't really know ..you guy buy veggies and put water in a bowl with them and heat them up. but meats i have no idea! sorry!

The crock pot is great too. You can make meatballs, casseroles, pasta sauce, stew, chili, a pot roast, soups and many more foods. The skillet will allow you to brown the meats first then add to the crock pot with remaining ingredients and you have a lovely meal. A rice cooker for rice, stir fry in the skillet. Rice with curry is good too. Make the curry in the crock pot

Try the Nu- wave oven. I am really enjoying cooking on it for my kids. I have 4 teenage boys 12,15,16, & 19. It is great.
