I'm trying to apply a text stroke to some highlighted text in Photoshop, so I go to edit -> stroke, but it's greyed out. What the hell?

Type your text> click on it> go to the Layers palette (if you don't see it click on Window> Layers) and click on the small black button with a white f inside> this opens the blending options menu> click on Stroke and the Layer Style window shows up.
Now you can customize your stroke color, size, opacity and so on.

stroke does not apply in text layers. Try one of two things. Use a faux bold (found in the character window), or rasterize the layer and then add stroke.
