It's called a French dip. Put roast beef or Turkey Pastrami with swiss cheese on a Hoagie and toast it long enough to melt the cheese.
It's really good with roast beef but I tell people to use Turkey Pastrami because it's healthier.
You actually dip the sandwich in the French onion soup.

I think that french onion soup is perfect all by itself, or served with a simple salad with a vinagrette. However, if want sandwiches as well, perhaps a tomato basil panini or french ham and grilled cheese might work. Take white bread and remove crusts. Spread thinly with dijon mustard and layer thin slices of ham and fontina cheese. Top with bread and spread with a thin layer of butter. Place in saute pan and cook until golden on both sides and cheese starts to melt. Top with a cheey bechemel sauce (very very cheesy!!!) and broil in oven until golden. Serve with knife and fork. I like to pair a grilled cheese sandwhich with that. A grill cheese sandwhich made on dark rye bread (pumperknickle). I start by spreading the butter on one side of each slice of bread and lightly sprinling it with garlic powder. Then I used deli swiss cheese slices for the inside. You could also add turkey, or roast beef to the inside of this sandwhich. Keep warm in a 250 degree oven.

Any grilled sandwich would go with french onion soup. Maybe a nice turkey and swiss or grilled cheese sandwich would be nice.

cheddar tomato dumpling Ingredients: 2 tablespoons finely chopped onion 1 tablespoon finely chopped green pepper 2 tablespoons vegetable oil 2 tablespoons all-purpose flour 1 can (28 ounces) diced tomatoes, undrained 1 tablespoon minced celery leaves 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon pepper DUMPLINGS: 1 cup all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons shortening 1/2 cup shredded cheddar cheese 1/2 cup milk Directions: In a large skillet, saute onion and green pepper in oil until tender. Add flour; stir well. Gradually blend in tomatoes. Add celery leaves, sugar, salt and pepper; bring to a boil over medium heat. Cook and stir for 2 minutes. Reduce heat; cover and simmer for 5 minutes. Meanwhile, for dumplings, combine flour, baking powder and salt in a bowl; cut in shortening until crumbly. Add cheddar cheese. Stir in milk just until moistened. Drop batter by tablespoonfuls onto simmering tomato sauce. Cover and simmer for 20 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering). Yield: 4-5 servings.

Personaly i think a turky sandwich with slightly toasted bread/roll. Letuce helps add the crunchyness as well that really is good with the cheese and the soup.
