What do you guys think of this? :

Get a board. Put some flat lights around different places. Wire the circuitry in such a way that the when the switch is on the lights would glow at random places. And I have to move my arm or legs accordingly to touch those safety lights.

Am I making this too complicated?
Is there a simpler form for this?

I used to hold a small stuffed animal at about my head height and let it go.Then spin,acquire,and back kick.

Also I would have a buddy pose his hands as in clapping.
The drill is to throw a punch between his hands before he could clap his hands.

Take some tennis balls and have someone drop them head level in front of you. You try to hit, strike, or kick them as they are falling before they hit the ground. If you miss or they hit the ground and bounce back up you try again with the same technique or another before it hits the ground again.

Another drill is to have someone try to grab your punches while you punch in between their hands. If they are able to grab your hand or wrist then you are slow or not pulling it back as fast as you can.

A third is to take a piece of paper about two inches square and have someone drop it in front of you from head level. You have to hit, kick or strike it before it touches the ground.

We use all these drills in my studio for students to develop their reflexes, hand eye coordination or foot eye coordination, and their aim. Enjoy.

I like taking a bo staff, holding it out in front of you, and throwing a "punch" movement, releasing the staff, bringing the fist to your belt, and back out to catch the staff again.

Tai-chi. It sound boring, but I think its really fun. I was surprised that going slow actually makes you faster.
