As a former chef and from Canada, the funny thing is it is only known as Canadian bacon outside of Canada. Here it is called back bacon, essentially it is a smoked boneless loin of pork, cured then smoked and formed in to a round shape.

Here we have another product similar called Peameal bacon, it is the same boneless loin cured but not smoked, and rolled in corn meal, it is more popular up here than back bacon as it is so similar to ham, the only place that use it here are McDonald's for the Egg McMuffins.

Canadian bacon is what Americans call peameal bacon,it's quite tasty.

canadian bacon is lean back bacon. It is only in the us that is is called canadian.
