Because, although they readily admit that the 'human mind can not comprehend the inscrutable mystery of the trinity', they are certain that if we do not believe in it, we are wrong.

The Bible says Jesus sits at the right hand of God in Heaven. It also calls Jesus the "slain lamb" in heaven. He is separate and distinct from God in the Bible.
God split into thirds and sent 1/3 to earth as his Son, then let his son be killed, but it was really 1/3 of himself. Then that 1/3 of himself rose to heaven to sit at the right hand of the other 2/3rds. Or 1/3, not counting the Holy Ghost, who's only contribution was impregnating a child virgin.
Hmmm. How does that make sense to anybody?
But Christians say they understand it and explain it like a "egg" or like an ice cube. I'll bet God likes being compared to a cracked "egg" with the insides separated into different bowls.

There is no mystery that the Trinity is One God but three divine persons as there is ample proof in scripture, the mystery is how this can be fully understood by us finite creatures.

The trinity is not mysterious, it refers to many aspects of the universe not just the Father, Son & Holy spirit. It also refers to mind, body & spirit; physical, non-physical & metaphysical; id, ego & superego; conscious, subsonscious & superconscious; energy, matter & anti-matter. Time is also divided by 3: past, present & future. Space can also be divided by 3 as well: here, there & the space between. There are also 3 energies: thoughts, words and actions. It all depends on how you personally interpret it =)

Amos 3:7 tells us that God reveals ALL to his confidential servants the prophets. There are no mysteries, with the exception of the exact "day and hour" of the end of this system of things.
So good question.

When presenting the concept of the Trinity initially it usually confounds people. Few nominal Christians have studied either the virgin birth or the Trinity sufficiently to expound these doctrines.
The Christians who say the Trinity is a mystery forget the Bible's clear statement in 1 Corinthians 2: 16 b
15But he that is spiritual judgeth all things, yet he himself is judged of no man.
16For who hath known the mind of the Lord, that he may instruct him? but we have the mind of Christ.
they are simply being double minded. The image of God in man which reflects the Trinity is not as some think, body soul and spirit - we are souls with bodies. Our souls are those which reflect the Trinity. These aspects of the One Trinue God are characteristics - not three separate gods -
they are knowledge, understanding, and wisdom.
Those who say the Trinity also forget the Bible statements:
Mark 4
11And he said unto them, Unto you it is given to know the mystery of the kingdom of God: but unto them that are without, all these things are done in parables:
Ephesians 3
3How that by revelation he made known unto me the mystery; (as I wrote afore in few words,
4Whereby, when ye read, ye may understand my knowledge in the mystery of Christ)
5Which in other ages was not made known unto the sons of men, as it is now revealed unto his holy apostles and prophets by the Spirit;
6That the Gentiles should be fellowheirs, and of the same body, and partakers of his promise in Christ by the gospel:
7Whereof I was made a minister, according to the gift of the grace of God given unto me by the effectual working of his power.
8Unto me, who am less than the least of all saints, is this grace given, that I should preach among the Gentiles the unsearchable riches of Christ;
9And to make all men see what is the fellowship of the mystery, which from the beginning of the world hath been hid in God, who created all things by Jesus Christ:
they are unskilled in apologetics - either we have minds to understand (look up the word understanding in a Concordance and you will see what I mean) or we are ignorant. The majority of those who say God is beyond understanding are contradicting Jesus own statements that
I am the Truth
Ye shall Know the Truth
and it (the Truth) shall set you free.
God wants to teach us. We prefer teachers as opposed to letting God teach us through our own diligent prayer and study.

Romans 1:20, says "For the INVISIBLE" (Spiritual) "things
of him from the creation of the world ARE CLEARLY
SEEN, BEING UNDERSTOOD BY THE THINGS THAT
ARE MADE, EVEN HIS ETERNAL POWER AND
GODHEAD; SO THAT THEY ARE WITHOUT EXCUSE:"
OK, this says we can understand and see clearly the power
of God and the Godhead by observing His creation. We
are the creation which was created in His image after His
likeness. Genesis 1:26, "in our image, after our likeness";
in Strong's Exhaustive Hebrew Concordance, image is
# 6754 and means phantom or illusion; likeness is # 1823
and means shape or model. Paul in Romans 7:14-25, tells
us we are a two-fold being made-up of our inward/spiritual
man and our outward/flesh man. John 4:24 says God is
a Spirit and Colossians 2:9, says of Christ, "For in him
dwelleth ALL the fulness of the Godhead BODILY".
Jesus is the body/temple for the fulness of God the Spirit.
We are the temple, for our measure of the Spirit; but the Spirit wasn't given unto Jesus by measure; John 3:34. We
can see the Godhead, by observing his creation, us.
This explains why Jesus told Philip that he had seen the
Father when he had seen Jesus. Jesus is the visible body
of the invisible God; Col 1:15.
Inorder for Jesus to die, God the Spirit had to leave Jesus,
thus His cry, "My God, My God, why hast thou forsaken me".
The body died, but God the Spirit can not die; it merely left
him long enough for his body to die FOR US. Our spirit
leaves us when we die also. Look at God's creation and
see HIM.
