I read the answers so far and I second the resounding yes. Veggies are delicious raw, the organic kind is 99 per cent of the time perfectly safe and extremely high in vitamins and nutrients. I used to sit in my garden and wipe off carrots and peas, and believe it or not, potatoes (wouldn't recommend that one) and eat to my heart's content. Probably everything that grows that is not hard as a rock is acceptable to eat raw, as long as you're assured they are free from possible bacteria.

It's fine to eat raw....following is a great recipe for dipping...
enjoy!
Herb Dip
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tsp. dill weed
1/2 tsp. soy sauce
1/4 tsp. dry mustard
dash oregano
dash thyme
assorted fresh vegetables
In small bowl, combine all ingredients except vegetables; mix well.
Cover and refrigerate at least 2 hours to blend flavors.

I prefer it raw and a nice dip. But like someone else said the stem end is tough. I also drizzle them in some olive oil and grill them short time) and eat almost raw.

Yes you can. I actually prefer it raw, although, it doesn't prefer me, if you know what I mean. I DO suffer thru it tho. It's worth it in the end.

Most definitely, it has more nutrient that cooked ones, just snap where it breaks discard the hard part, eat the rest, it is great with dip too.
