CHICKEN BREAST MILANESE

1 lb. boneless, skinless chicken breasts
1 egg, may substitute 2 whites if concerned about fat intake
3/4 c. Italian style bread crumbs
1/4 c. safflower oil
1/2 c. dry white wine
3 tbsp. lemon juice

Flatten chicken between 2 pieces waxed paper until 1/4 inch thick. Beat egg with 1 teaspoon water. Dip chicken in egg and coat with bread crumbs. Heat oil until hot. Add chicken, cook until golden and cooked through, about 5 minutes. Remove from pan. Drain off any remaining oil. Add wine and lemon juice. Stir over medium heat until slightly reduce, about 1 minute. Return chicken to skillet and heat 1 minute.
Serve garnished with lemon wedges and parsley.


Ranch Chicken Breasts Recipes

1/2 cup ranch salad dressing
1 tablespoon flour
4 boneless skinless chicken breast halves
1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese


Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 25 minutes or until chicken is no longer pink in center and juices run clear


Chicken Parmigiana Recipe

Ingredients:
3 chicken breasts
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 cup dry bread crumbs
1 1/4 cup butter
1 can (10 1/2 oz) pizza sauce
6 slices mozarella cheese
parmesan cheese

If using whole chicken breasts, cut in to halves. In bowl beat egg, salt, and pepper. Dip chicken into egg mix. Then coat with crumbs.

In large skillet saute chicken in butter. Arrange chicken in pot. Pour pizza sauce over chicken.

Cover and cook on low 6 to 8 hours. Add mozzarella cheese, sprinkle parmesan cheese on top. Cover and cook 15 minutes.

Basil-Stuffed Chicken

-boneless skinless chicken breasts
-mozzarella cheese
-basil leaves (fresh or dried flakes)
-tomato
-parmesan cheese
-Italian bread crumbs
-light mayo

Slice the chicken breasts in half so they open like a book (be sure not to slice all the way through, but leave a piece connected). Coat the outside of the chicken with the mayo, then dip in breading mixture (3 parts bread crumbs, 1 part parmesan chese). Open the chicken and stack a slice of tomato, a slice of mozzarella, and a basil leaf (or sprinkle the basil then stack the cheese and tomato). Use a toothpick to pin together the edges of the chicken and help house the middle ingredients in, then broil close to the heat for 4-8 minutes each side, depending on thickness of chicken.

Be careful not to burn the breading, and remember to remove those toothpicks before you take that first bite, and I guarantee you'll love this recipe!

Or for an easier, faster recipe, try Lemon-Cinnamon Chicken.

Put your chicken breasts in a baking dish and pour a bit of fresh lemon juice over it (not too much or the lemon will be too strong). Then just sprinkle the cinnamon all over the chicken and bake. Make sure to turn your chicken halfway through and sprinkle more cinnamon. You won't need more lemon juice because it will already be soaking in the juice that's run off from the top.

It sounds like an odd combination but I gave it a try and was pleased. Just remember to be careful on that lemon juice.

Saucy Chicken:
2-1/2 to 3 lb. frying chicken, cut up (or breast)
1 can (10 oz) golden mushroom soup, or cream of mushroom soup
If you all like mushrooms, you can add 1 can (4 oz) mushrooms, drained to the soup
1 tsp. salt
Arrange chicken skin side up in baking dish. Place the largest pieces toward the outside. Spoon soup over chicken, cover, microwave about 25 minutes if using a 700w oven, less time in a 1,100w microwave. Turn dish occasionally.
(this can be cooked on top of the stove in a deep pan with a lid)

Well boneless & skinless means you got rid of the flavour.
I find chicken breasts very dry, I prefer the legs.
So now you have to substitute other flavourings.

The simplest is to coat each piece with corn-meal.
You can get this as Shake'n'Bake, with flavours added.
Or mix your own, with paprika, cayenne, or poultry spice.
Bake in the oven at 425F for 1 hour, test for clear juices.

Another method would be to saute in a little oil first.
You can add garlic & onions to the oil for more flavour.
Then you can put them in a casserole dish in a 350F oven.
Surround with cooked macaroni & chopped celery.
Pour mushroom, tomato, or other cream soup over.

A third alternative, would be to cook in a crock-pot.
Layer potatoes, carrots, celery, onions, first.
Add 1 cup of chicken stock, or water & boullion cube.
Saute chicken pieces in oil with garlic & onions.
Add to crock-pot, cook on high for 3-5 hours or low 7 hours.
Add peas, corn, or green beans, in the last 1/2 hour.

Cut chicken into strips and fully cook
slice a white/red onion with a green/red/yellow pepper into strips, saute. Use water instead of oil to keep calories and fat down.
Cook an angel hair (really thin spagattii like pasta), it wont take long - approx 5-7 min, watch carefully to ensure you dont over cook.
Once chicken has fully cooked dump in some VH honey garlic sauce or a teraycki sauce, allow chicken and sauce to slimmer - lil bit of bubbling while everything else finishes cooking.
Strain noodles and portion out into bowls, top with peppers and onions and chicken, drizzle with sauce of choice and enjoy.
Its quick, easy and healthy! Tastes good too!

Spinach Stuffed Chicken Breasts
INGREDIENTS:
1/2 cup chopped onion
3 tablespoons melted butter, divided
1 package (10 ounces) frozen spinach, thawed and squeezed dry
16 ounces part skim ricotta cheese
1 egg, lightly beaten
1/4 cup fresh chopped parsley
1/2 teaspoon dried leaf oregano
1/2 teaspoon dried leaf basil
ground black or seasoned pepper, to taste
6 boneless chicken breast halves
ground paprika
parsley sprigs for garnish, if desired
PREPARATION:
Saute onion in 1 tablespoon butter over medium heat until tender, about 10 minutes. Combine with squeezed spinach, cheese, egg, parsley, oregano, basil, pepper, and nutmeg. Mix well. Pound each chicken breast lightly to flatten evenly.
Place approximately 2 tablespoons spinach-cheese filling on each chicken breast and roll up. Fasten with string or toothpicks. Place in 1 layer in a glass baking pan. Sprinkle with paprika and drizzle with remaining melted butter. Bake at 350° for 40 to 45 minutes, or until golden brown and chicken is cooked through. Garnish with parsley. Serve with rice, if desired.

*********CHICKEN BREAST WITH LEMON
4 boneless chicken breasts
Flour for coating
Salt and pepper
1 tbsp. oil
5 tbsp. butter
2 tbsp. lemon juice
3 tbsp. chicken broth or stock
3 tbsp. chopped parsley
Cut chicken breast into 2 slices (horizontally). Season flour with salt and pepper, then coat chicken. Heat oil and 3 tablespoons butter in large skillet. Add chicken and sauté 5-6 minutes on each side or until tender (medium-low heat). Place on a warmed serving platter and keep hot. Add lemon juice and stock to pan juices. Bring to boil. Boil 1 minute. Add parsley and remaining 2 tablespoons butter. Stir until blended. Pour over chicken.

*********SWEET AND SPICY CHICKEN
6-8 chicken breast
1/2 cup orange marmalade
1-2 Teaspoons chili powder
Preheat oven to 400 degrees.
Line baking sheet with foil. Combine marmalade and chili powder in a ziplock bag. Place chicken in bag and evenly coat.
Place chicken on baking sheet and spoon any remaining mixture over chicken.
Bake for 30 min.

********IRISH MYSTERY CHICKEN
4 slices ham (luncheon)
4 whole chicken breasts, split, boned & skinned
1 can condensed cream of mushroom soup
1 c. sour cream
1/2 c. Irish mist or Kahlua
1 c. sliced mushrooms or more if desired
In an 8"x12" baking dish, arrange slices of ham on bottom, on each slice place 1 chicken breast, skinned side up. If large slices of ham, cut in half. Mix remaining ingredients and spoon over chicken covering completely. Bake in preheated oven for 1 hour at 350 degrees. Serve over wild rice.

Put the chicken in a crock pot with

1 cup sour cream
1 can cream soup (I like mushroom but any kind works)

Cook on low heat for 6 hours and then serve over white rice. Very simple and very tasty!!

make some chicken cordon bleu...

cut the chicken breast into halves, and then make a pocket in each half. put some ham in, and some cheese. then roll it in flour, then in beaten egg, and then roll in bread crumbs. fry until the chicken is cooked.

mmm!!! um i read this once but u could make oriental grilled chicken.. u have to cut it up into bite sized pieces and marinate it tho.. i dont know exactly what they use
