Actually, there's tens of thousands or perhaps even hundreds of thousands of recognised saints in the Catholic Church. Pope John Paul II alone canonized over a thousand of them.

There are literally thousands of saints in the Catholic Church.
Each one is honored for the heroics of their lives. Many of them were martyred for their beliefs -- that is, they were put to death for not betraying the True Faith.
Others, like Mother Theresa worked among the destitute and dying in Calcutta's biggest slums. So many people would die in the gutters on a daily basis that trucks used to come by and toss all of the dead bodies in the back end and dump them into mass graves to avoid the stench and disease. Mother Theresa worked tirelessly for 47 years with these people.... building shelters where they could go to die with dignity. Their wounds would be nursed, people fed -- often spoon-fed given their near-death state, and comforted. In all of India NO-ONE was ever allowed to go to meet with the Prime Minister without an appointment -- except Mother Theresa.
Saint Elizabeth Seton was an American-born Episcopalian who came from great wealth. Upon the death of her husband, she used her great wealth to build schools to educate poor children and she joined the Catholic faith.
The Catholic Church does NOT "make" saints -- it is God who raises up people to move in faith. When a new saint is canonized in Rome, we are glorifying God who has done so much with someone who was so small and insignificant.
And Mary said:

47and my spirit rejoices in God my Savior,
48for he has been mindful
of the humble state of his servant.
From now on all generations will call me blessed,
49for the Mighty One has done great things for me—
holy is his name. (LK 1:46-49)
