Prime Rib! It is awesome. Also for some added fun get a fondue. You can either use it for appetizers, or dessert. Bread cubes dipped in cheese in one, some type of chicken in the other. I cut up fruit and melt chocolate and we dip that, it's fun. You can also chocolate coat marshmallows.

Goose is the answer, it is just divine, the taste will knock you out. Order it from your butcher, don't buy it frozen from the supermarket, you will have to order it a few weeks before Chriggy because they have to know what to order. When you have devoured your goose, keep the bones, and cool and freeze them, they make wonderful stock. Oh and also, the fat, keep that, to do roast potatoes.. It will keep quite a long time... The longer you use it to do your roasties the better it will be. Always cool it and put it in the fridge. And finally, enjoy!

For the past few years we have been getting three bird roasts or Goduckens.
They are 3 birds stuffed inside each other a chicken stuffed inside a duck inside a goose.
Last year we had a pheasant inside a duck inside a goose, it was also stuffed with apricot stuffing, it was divine.
Butchers make them up or you can order them from organic farms online.
You can choose whatever birds and stuffings you want.

4-Nut roast! salmon! Alot of stuffing and gravy what more do you need?

If you can afford it I would get a well aged piece and have the butcher season it.
Another nice treat is a seaside dinner of Clams/prawns/crab. All steamed in one pot with kelp to separate each layer. This a dinner no one will forget. Serve with bread, slaw and a good white wine.

We have one of 4 things for Christmas dinner at my relatives' house: lasagna, roast lamb, broiled salmon or prime rib.
You can make veggie or meat lasagna, and serve it with a salad, sauteed spinach , and garlic bread.
Lamb or prime rib can be served with oven roasted root vegetables, and some steamed vegetables.
Salmon can be served with rice pilaf and steamed vegetables.

Go the the fishmongers, buy a whole salmon (get them to gut it), add herbs, peppercorns and anything else you can think of in the middle of it. Then borrow a fish steamer (they should let you borrow this from the fishmongers) and cook away. Absolutely lovely.

I usually have a turkey and ham. But one year I had a goose and pork tenderloin and it turned out very nice. I made it more formal and my family was pleased. There are some great pork tenderloin recipes out there. You didn't ask for a recipe so I won't leave mine but they trick is to marinate.

How about a seafood platter?Large crab in the centre,prawns,oysters,cockles,mussels,whelks,squid,clams serve with a big bowl of crispy salad & skinny fries!Yum!
Thats what we're doing this year!
Don't forget the fresh crusty bread on the side!
