It drives me insane and looks quite unproffesional. So really why do you use chat speak, only of course if you really do use chat speak.

If you mean internet chat abbreviations like 'lol' and 'afk' etc, people use those because they are common chat items and it saves time to abbreviate them. The same reason you write USA instead of writing out "The United States of America'.
