Here is mine.

1 rotisserie chicken cut up, chopped finely or use a cuisinart
(i only use the white meat for the chicken sald)
2 cups of chopped celery
2 cups of finly chopped walnuts
celery seed to taste
paprika to taste
mix with hellman's mayonnaise to desired taste.

It's delish, promise!

racer-I think I will try that. I'm gonna leave the walnuts in though, I like walnuts and cranberries together. Normally I don't like fruit in my chicken salad.

Elizabeth C-this sounds like a guy's recipe yet your name is clearly a girl. I'm confused.

I am from New Orleans . My grandma usually makes the chicken salad, every one loves her chicken salad.

She boils 4 small hens / chickens
once they are done boiling she cuts green onion, white onion and cajun seasonings
then she shreds the chickens by hand, into small pieces
she then mix Blue Plate Mayonnaise with the onions and seasonings
she adds the chicken with salt pepper and a little bit of cayenne pepper.

she then refrigerates the chicken salad over night .
she said it tastes much better, because the ingredients expel when refrigerated.


I eat it with ritz crackers, best chicken salad ever!

Sounds really good ex the walnuts.

I poach chicken breast and let them cool, then I shred them by hand, this add some texture to the salad. Hellman's is ok, but I use miracle whip, maybe a mix of the two. Salt, pepper, garlic POWDER, not salt. and I add a teaspoon of sugar. Mix it up then I add some parsley flakes (dry) It is a clean looking salad and it is very good also, sometimes I use craisins in it. Let it chill for a while in the fridge before eating. Better the next day too.

Here is my favorite recipe. I use it at the Ranch house for a quick sandwich.

*********CHEDDAR CHICKEN SALAD SANDWICH
2 c. chopped, cooked chicken
1/2 c. Miracle Whip salad dressing
1/2 c. chopped, pitted ripe olives
1/2 c. (2 oz.) shredded sharp natural Cheddar cheese
1/4 c. chopped green pepper
1/4 c. chopped onion
6 croissants, split
Lettuce
Combine chicken, salad dressing, olives, cheese, green pepper and onion; mix lightly. Chill. Fill croissants with lettuce and chicken mixture. 6 sandwiches. Excellent for a hot day!

I dice my cooked chicken, add cooked and cooled cheese tortellini, and pour bottled Italian dressing (fat free works best for this recipe, as it doesn't separate) over it. Sometimes I add a little Parmesan cheese, too. Chill a couple of hours so the flavors have a chance to blend a little, then serve.

no one in my family likes mayo or miracle whip, so here is our chicken salad recipe, from 1945.

4 cups of cooked (boiled) chicken
1/2 cup of sour cream
2 cups of chopped celery
2 tsp of finely diced onion
1/2 package of softened cream cheese
1 cup finely diced mushrooms any variety you like
salt and pepper to taste

we make sandwiches out of it, or serve it on home made crackers. ENJOY

Not a family recipe, but a lady at work made chicken salad with small pieces of pineapple in it. I never would have done it myself, but it was absolutely wonderful.

my chicken salad suck [ iam a guy not the best cook}
i have a normal salad
make chiken nuggets
cut them
put them in salad
and put italian dressing
and eat

I like grapes halved and almond slivers. I usually mix up my veggies with this one. Sometimes celery, onion, whatever! I also occasionally like water chestnuts in there.
