I would like to try something other than 'Roast Chicken' for tea tonight as this gets so boring. Can you reccomend any new recipies?

Try Adobo. soooo good!!! Get the little chiken drumettes and put Soy Sauce and vinegar about 2:1 ratio. Then, one bay leaf and a bit of water. Let it cook until its done.
Yum Yum Yum! Oh...and GARLIC LOTS OF IT!!!

I have a small outdoor gas grill & I put lava rock under the grill ( catches dripping fats & smokes the food ) .
Since doing chicken this way , I can no longer eat stove cooked .
The taste is so fabulous with just salt .

For best cooking , I remove the breast bones and cut open the thigh and legs to expose the bones & open up the meat .
When done this way , It cooks really fast and is still quite moist when done .
No need to overcook the outside , just to get the inside by the bone done .
The boneless & open pieces cook in minutes , be prepared , because letting it go like cooking for the bone - in time will burn it .

ill have to try this to
spicy Chicken and Corn Soup
1 tablespoon vegetable oil
4 boneless skinless chicken breast halves, cut into 1/2” chunks
1 cup finely chopped onions
2 garlic cloves, finely minced

1 tablespoons granular chicken bouillon
10 cups hot water
1/2 teaspoon ground cumin

4 cups frozen corn
2 16 oz. cans cream-style corn
2 4 oz. cans chopped green chilies
1 teaspoon Tabasco pepper sauce (you may use less to taste)
1 teaspoon salt, or to taste
3 cups Basic Cream Soup Mix

4 cups shredded Monterey Jack and Cheddar Cheese
2 medium tomatoes, chopped

crushed tortilla chips
fresh cilantro


Heat the vegetable oil in a large Dutch oven; add the chicken chunks and cook over high heat until lightly browned; remove the chicken from the pan and set aside. Turn the heat down to medium, add the onions and garlic and cook until the onions are wilted. Add the chicken bouillon, hot water, and cumin; bring to a boil and add the frozen corn. Cook until the corn is tender. Add the cream style corn, green chilies, Tabasco, and salt; whisk in the Basic Cream Soup Mix and stir until smooth. Add the chicken, then turn the heat down and add the cheese, stirring to melt. When the cheese is melted, stir in the fresh tomato and serve immediately with crushed tortilla chips and cilantro

Put rice in a crockpot. Add one cup of cream of chicken soup. Put chicken pieces on top. Add another cup of cream of chicken soup. Cook on low for 8-10 hours. You would not believe the flavor. Simply delicious.

Other recommendation that my family loves:

Take instant potatoe flakes, parmesan, and seasoning salt. Mix together in shallow bowl. Dip chicken pieces in milk and then coat throroughly in potato mixture. Cook in 350 degree oven for 1 hour.
Delicious.

Try this...
JESSICA'S JAMAICAN CURRY CHICKEN

1/2 chicken (cleaned, with skin removed)
4 stems fresh thyme
1 onion
5 tbsp. curry
2 cloves garlic
3 tbsp. all purpose seasoning
3 tbsp. black pepper
1 tbsp. chicken seasoning
3 white potatoes (peeled, cut in cubes)
1 lemon
1 tbsp. vegetable oil
2 tbsp. butter
2 c. water
1/2 Scotch bonnet pepper

Wash chicken with lemon and cut into bite size pieces
Season with all dry ingredients

Chop all herbs and add to chicken (use hands to rub in seasonings, and let sit in refrigerator for 1/2 hr.

Place chicken, water and oil in a pot, stir, and cook on high till it comes to a boil,stir, lower heat until chicken is almost cooked.

Add potatoes and butter.

Cook until water is reduced and potatoes are tender.

Serve over steamed white rice

Serves 4. Enjoy
