This is the recipe my Indonesian-Dutch neighbor gave me many years ago for what you call Egg Foo Young. The Indonesian-Dutch word for it is Phojonghai (pronounced Foo Yong Hi). The sauce is also listed.

PHOJONGHAI

1 can tuna fish
1 T oil
3 or 4 garlic cloves - minced
1/4 head cabbage - shredded
5 green onions
1 medium onion - finely chopped
dash of pepper
dash of salt
eggs - 1 or more per person

Take a bowl for each person. Place the egg/s in the bowl and then add a very small handful or spoonful of all of the above into each bowl. Stir well. Place a little oil in a skillet, add the first bowl of mixture, spreading out a little in the skillet. Cook until browned on the bottom. Turn over and brown the other side. Place in the oven on Warm until all have been cooked. Make the sauce with the leftover garlic and serve the sauce on the side.

SAUCE

1/2 tsp oil
what is left over of the garlic after all the bowls for each person have been put together
1/2 small bottle catsup
2 T soy sauce
1/2 c water
1 T sugar or more if needed

Bring the sauce to a boil, stirring occasionally. Serve over the "pancake".

2 Tablespoons Vegetable oil
2 Tablespoons Flour
1 cup Chicken broth
1 Tablespoon Oyster sauce
1 teaspoon Dry sherry
1/4 teaspoon Salt
1/4 teaspoon White pepper

2 tablespoons cornstarch
1 1/3 cup water
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon beef boullion or 1 beef cube
Mix ingredients all together. Set on medium heat, stirring frequently. till thick.
