Develop a memory test...have a person take the test, then exercise aerobically for at least 15-20 minutes...then take the test again. What you are trying to demonstrate is how the increased blood flow to the brain improves memory.
Research the mineral content of American soils. There have been many studies done over the years and the trend is downward due to lack of crop rotations and over-farming. You could graphically display this trend for different parts of the country.
How about close up pictures and descriptions of the damage of smoking on different organs, including the skin. Everyone hears about the damage to the lungs and heart, but it has effects on many other areas that aren't nearly as appreciated. For instance, I don't know your age, but kids find the increase in wrinkles and discolorationn of the skin of smokers very interesting.
Can you do a study of the different commercial drinking waters available compared to that of your city's water?
How about comparing the nutritional information on comparable fast foods, i.e, a Big Mac versus Hardees, Burger King, Jack-in-the-Box, etc.
Compare the nutrient content of a green-harvested apple (or whatever) against a fully-ripe fresh-picked apple and one that is over-ripe. You'll be surprised!
How about a comparison of mouth bacteria after brushing, brushing and flossing, brushing and flossing and mouthwash, and not brushing at all. Or similarly compare brands of toothpastes or mouthwashes.
Find the best way to clean a toothbrush. Measure the bacteria on it before and after each method. Hint: Be sure and include putting it in the dishwasher.
How about determining the best way to deal with sore muscles after a work-out, i.e., massage, hot bath, cool-downs, etc.
If you can find an older person(s) to participate, measure different physical parameters before and after a full-body massage. The older they are and the more aches and pains they have beforehand, the better.
You can do a CSI type project by taking a black light into different places and looking for "organic" signs of sputum, sweat, dirty hands, etc.
My last one is actually kind of fun...but a little messy. Get a bunch of kids...preferably around preschool/kindergarten. Put out a number of bowls of different colored glitter. Have each kid dip their hands in ONE bowl of glitter, then give them some time to play. Then you go around looking for signs of glitter. The analogy is the glitter is bacteria and how bacteria is spread by not washing hands.

There are probably going to be a jillion projects about cancer, so avoid that. Have you considered other illnesses such as Multiple Sclerosis, Celiac Disease, or even something like Malaria (which is becoming a problem again in less developed countries).
