Guacamole is best went kept very simple and using the best avocados.
First buy a couple of avocados and be sure they are ripe (if you buy them rock hard, put them in a paper bag for a couple of days until they yield to pressure when you push on them lightly)
I like to use a potato masher... take the avocados out of their skins, remove their pits and mash them up to your desired smoothness or chunkiness.
Add a few splashes of lime or lemon juice (best if you use a fresh lime or lemon)
You can then add to your taste....salt, pepper, a little chopped onion, a little chopped cilantro, a little chopped tomato.
Experiment with it to your taste. Sometimes I throw in a little spicy salsa too.
You really want the avocado to be the star....be light-handed with all the added ingredients.
Enjoy with your favorite corn chip or as a topping on a taco.

GUACAMOLE SAUCE
Ingredients:
Sauce:
1/4 cup finely chopped green onions
1/4 cup finely chopped parsley
1/4 cup fat-free sour cream
2 tablespoons fresh lime juice
1/4 teaspoon salt
1/8 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 ripe peeled avocado, seeded and coarsely mashed
Yield:
4 servings (serving size: about 3 tablespoons sauce)

easy honestly is guac spice packeges r the best! im from south texas so i know. somemade salsa is a different story but you want good guac see if you can find a season pack for it there all over where im around but if you cant best bet is mush guack add lots of salt lime not lemon a little tamato if you want, but i dont cause thats what pico di guio is for. thats really it o yeah onions but sauted onions you dont want a crunch in you guac with out the season pack remember you want the taste not to over power the food. if you want a recepie for the best spanish rice let me know its my grandmothers mothers recipie. she taught me, i love to cook and love to help other in cooking too. for guack dip just put a lil water

six ripe, but not mushy avocados. peeled and pitted and place in a large bowl, add up to three small ripe tomatoes and chopped onion. mas together gently so you do not smoosh the tomatoes, if it is a bit chunky, that is ok. add a tsp of lemon juice and salt to tase, you needthe salt.

How ever you decide to make it do not use packaged mixes and never never use the blender - you must mash the avocado with a fork for the best effect.
