It was discovered and patented in 1909 by Ajinomoto Corporation in Japan. In its pure form, it appears as a white crystalline powder; when dissolved in water (or saliva) it rapidly dissociates into free sodium and glutamate ions (glutamate is the anionic form of glutamic acid, a naturally occurring amino acid)....

processed foods, and has been known cause
cancer if ingested excessively.

It is a food additive and it is not salt. The chemical compound is much more complex than salt.

you have most of the information already, it is also an appetite stimulant, chinese food has a lot of it in it and thats why you are hungry a while after eating it. i add it to groundbait when i am fishing and have had amazing results! but its not good to have too much, like any additives

its not salt..its monosodium glutamate. in phils, its commonly known as vetsin. but i think studies shows that too much of these on food preps is cancerous.
