Once they had kids. Who where their sons and daughters mating with? Their siblings?

Of course, not only that, but Eve was cloned from Adam in the one Genesis account, made from dirt in the other.

And then there's Noah's grandkids. They would have had to mate with their cousins at least, maybe siblings.

But Christians say that's OK. They make up some (unverified) stuff about how the gene pool was pure back then and it didn't matter.

Yes, they were. But it wasn't a Law (in Leveticus) untill after enough people populated the world not to inbreed. Besides that, people lived for an average of 900 years back then, so even if they did marry brother, sister or cousin, they were still "distant" relatives.
Inbreeding was not as bad back then, because there was more room for genetic error and mutations. This is the reason why everyone looks different today, because there were mutations occuring in the human Genome back then.

The creation of mankind was 2 fold. Genesis 1:26 mankind on earth, male and female. The second part took place at the same time as the first but in a different location. It took place in the garden of Eden. It was there that God created Adam and Eve. And when they were ejected out of the Garden of Eden it was there or here on Earth that Cain found his wife. No inbreeding.

Not necessarily. If you read chapter 1 of Genesis you'll find that there were people created before Adam & Eve.
