I would start with some classics, such as whole roasted chicken, lasagna, pasta with alfredo sauce, a simple roast beef, marinara sauce, poached fish, meatloaf, mashed potatoes....that sort of thing. It would also be a good idea to just cover some basics, such as broiling, steaming and roasting, as those techniques can encompass a number of dishes, from mains to sides and everything in between.

The same ones that they teach in Home Ec in school...dependent upon what they already know.

Start with scrambled eggs, then omelets without fillings, then omelets with fillings, so they can see how it comes together.

Start with a ground meat sauce or casserole so they can see how the fat comes out of the meat and how to season things. Move onto stew or chili, because they're hard to ruin yet can taste sooo good. Then move on to hamburger patties that they form, so they can see how to handle, but not mishandle, the ground meat and keep the flavor.

Start with simple cookies - I still enjoy snickerdoodles and first made them as a kid...or chocolate chip or oatmeal raisin cookies. For their first pies, start with them doing the fillings but using store bought crusts. It takes some practice to get the touch down for a flaky pie crust.

Get a basic cookbook and decent cooking utensils.

Maybe some basics like pot roast, baked chicken or burgers. Then maybe some universal side dishes like mashed potatoes, rice or mac and cheese (not from a box though). Also you could show them some different ways to cook veggies like steaming, boiling, grilling, etc. After learning these things, they can mix and match their way to a great meal! Good for you! Helping people learn to cook is a wonderful service!

I would get a copy of Mark Bittmann's How to Cook Anything and also the classic Joy of Cooking.

I would teach them how to make a bolognese sauce (easy and delicious), a vegetable soup, roast chicken, and some sweet items like banana bread or carrot cake.
