Oatmeal, breadcrumbs (flavored or not), crushed cornflakes-mainly is used as a binder and to retain some moisture. I always add some minced green pepper, onion and carrot to mine - sometimes make a well in the middle and stuff with cheese or chopped tomato, then recover, sealing with meat. Surprise!

You can also use some leftover mashed potatoes in place of the crackers. Just make sure you use an egg in your meatloaf or, not even the bread crumbs, will hold it together very well.
I generally use bread crumbs, black pepper, one egg, and about 1/4 of a medium onion - diced in my meat loaf. Once I've mixed it all together, I put it in the loaf pan and pour some catsup over the top and spread it out. Then I bake it in a 350º oven for 1 hour (put a Russett potato in with it too so you can have a baked potato with your meat loaf - they both will be done at the same time).

Honey, ain't nothin' better for a meatloaf than Quaker Oats! Makes the fluffiest meatloaf ever!
Place about a cup of quaker oats in a bowl of warm milk and let it sit for a couple of minutes. Squeeze a little of the milk out and knead into the minced meat as you would with bread. Leave a little of the milk as it will help make your meatloaf more tender.

Most recipes call for a dry bread product, but I really like to use soft bread torn in little pieces and I put tomato sauce in the meatloaf because I like it moist and juicy.

Fresh or dry breadcrumbs. You can also use finely grated cabbage (1 cup) with 1 beaten egg to bind the meatloaf if you are on a low carb food plan.

I use oatmeal (quick oats) in my meatloaf; others use bread crumbs either soft or dried. Basically, you just need a binding agent.

Japanese bread crumbs work the best. Just put em in a blender till they're ground really fine. Make sure you use an egg. Also make sure all your peppers and onions are chopped really small, big chunks will make your loaf fall apart

Oatmeal is great. Quick cooking, not instant. And don't cook the oatmeal first, just put in the dry stuff. Works beautifully and gives a bit extra nutrition and fiber.
