Are you asking what to serve? I would keep it simple, such as baked chicken, some wild rice, a steamed veggie and a side salad....nice and easy but still nutritious. Also, if it's for a group, it will appeal to a larger number of people.

I am only 61 but I do have a few ideas on the subject.
#1 Limit spices and sodium. Both of these are more problematic as we get older.
#2 You may not need large portions but a lot of variety is a good thing. Older folks have tried more things than most but become more willing to pass on particular items.
#3 Older people are less fond of finger foods. Don't ask why, they just are.
#4 Older people are rarely vegetarians and usually don't mind a few starches in their food.
My suggested meal would include:
A pasta dish. A good Ravioli or mac and cheese.
Fresh fruit or reasonable substitute like peach cobbler or a fruit salad.
French bread or fresh baked potato.
Peas or green beans.
Jello or chocolate pudding.
A small pastry or cookie.

I would start with soup - Vegetable maybe. Then roast beef with mashed potatoes and gravy and green beans or baby squash like zucchini and summer squash. For dessert, I would do either a cookie or a piece of cake with a little fruit on top.
The elderly seem to do pretty well with that combination. It's not too spicy but still has a lot of flavor. If the people you are serving don't have teeth, then they could have something like Salisbury steak which is ground beef. That can be gummed pretty easily if it's soft enough. I know in Nursing homes, they generally thaw ice cream partially so it's not so cold for them to eat. That's why I didn't recommend the ice cream above. I wouldn't like a bowl of melted ice cream. My grandmother loved vanilla ice cream - all the way to 101.
Hope that helps. You don't want to get too spicy and things like bananas and cheese can plug them up.
