QUICK CHOCOLATE EGGLESS CAKE

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar

Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.

Combine dry ingredients directly in the pan. Mix all the wet ingredients

In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.

Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.

Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

EGGLESS FUDGE CAKE

1 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. sugar
2 tbsp. cocoa
2/3 c. milk
2 tbsp. melted butter
1 c. chopped nuts
4 tbsp. cocoa
1 c. sugar
1 c. hot water

Combine first 5 ingredients. Add milk, butter and nuts. Pour into pan. Mix cocoa and sugar and sprinkle over dough in pan. Pour hot water over all. Bake at 350 degrees for 40 minutes.

you can add a little extra oil, butter, or water. Personally, I add a little extra of all three. The brownies will be fine, they will just have a thicker consistency. I actually like them better. I don't like my brownies light and fluffy.

Avocado. You will hardly notice it's in there. I would go 1 for 1, depending on the size of the avocado

use potatos they look a bit like eggs if you cut them down
