I have a basic knowledge of ArcGIS but would like to become more preficient in its use. Does anyone know if there any free websites which give walkthroughs of some of the more complicated things you can do using GIS?

Yes, if you go out to http://www.esri.com/ and click on training on the top of the page you will be able to find a lot of free classes through their virtual campus.
