Baked chicken breast (could be topped with any spices or low-non fat sauces), and a vegetable, plus salad. Change the spices/sauce, change the vegetable, that's a dozen dinners right there.

Turkey meat chili. Low in fat, has protein (from meat and beans) also veggies in the form of onions and tomatoes and peppers.

Lean meat, marinated (check out epicurious.com or foodnetwork.com for options), vegetable and salad.

Fajitas. Sautee some onions and peppers. Cook some lean meat, chickn or shrimp with your favorite spices. Place meat, veggies and some low fat cheese (along with guacomole if you want) into a low fat tortilla. Roll it up and eat it.
