There is no issue if you use TCP/IP
Use a media server on one end and a digital media receiver on the other end.

HD is about 20 Mbits/s, so plenty of bandwidth in Cat 5 for even multiple streams.

You can sent Component Video with Digital Coax Audio over one Cat5 by using a balun. A balun is a analog way of sending HD format.

You can us a HDMI Extender. This requires 2 cat5 to be run. One for Digital info (Video/Audio) and one for High Definition Copyright Protection (HDCP). This is a great way to sent the HD signal. However make sure the wires are not crossed. Even if one wire is missing in the connection... the signal is lost.

running a digital signal over anything longer than 5 meters will need a booster as digital hd signals do not travel well however analogue hd will

Niles makes a great system for doing this, just make sure you are using cate6 (shielded cate5) otherwise you will get signal loss and interference.
