It depends on what you're serving....red meat typically calls for red wine, such as merlot, syrah, shiraz, cabernet savignon etc....white meat,, such as fish or chicken typically calls for white wine such as chardonney, chenin blanc (dry) etc. Have the red wine chilled...white wine is usually served at room temperature.
