your body does not digest food that fast. it takes a good 6-10 hours for any foods that are ingested to complete the cycle of ingestion to defecation.
what is happening is that for some reason shortly after you eat a chemical message is being sent in your brain which is causing your bowels to purge. this is very common, drinking coffee does this to many people as well.

I think that normal and healthy. You not pooping what you just ate, it's probably 2-3 meal ago that are on their way out. I was told by a doctor that some people go once a week to people going 4 times a day. There must be a lot of room up there. I wouldn't be too concerned about being skinny, your lucky, eat whatever you like and enjoy, it might not last forever. Puberty can change everything, you may find you gain some when you start, some people do. You will fill out anyway and still grow taller for a while.

What kind of food are you eating? Cherries and high fibre foods? Try to change to protein type foods which stay in the gut longer as it has to be "processed". Lots of liquids in your diet. Whatever.
It is all good, however it is not the food you just ate that is leaving the back door of the barn; More like yesterdays meal. Want proof? Eat some corn for dinner(niblets, canned, frozen, cob - it doesn't matter and watch for it. The corn kernel skin does not get digested and will be evident. And your body has taught you when to go. If you are kept busy like "playing a tennis match" for example -running, jumping, bending and the like the body will hold onto the load for awhile longer as compared "sitting there and watching the match".

You are not pooping out the meal you just ate-- you are pooping out the meal before that. Moving your bowels as often as 3 times a day is quite normal, so I wouldn't be too worried about it. You might be eating a very healthy diet-- such as one rich in fiber-- which keeps your system moving. If you really feel that you are pooping too often, then I would suggest cutting down on some fiber and seeing how you feel (for you age, you should aim for 25 grams of fiber per day). Also be sure to consult your medical doctor about this just in case it is a symptom of something more serious.

All food processes through the stomach at the same approximate rate, 1.2 liters per hour. It does not matter whether it is liquid or solid, protien or carb. The stomach does not actually digest the food, that is done in the small intestine. The stomach merely finishes the job that your mouth starts, mashing the food into a digestible paste.

You need to go to the doctor and have him check you out. Pooping just as soon as you eat is not normal. I don't know what to tell you other than that.
