I like it a little juicy, but still cooked enough that I'm confident that all the bacteria, if any, have been expelled via heat.

Several ways.
Rare: with coarse sea salt and aged balsamic vinegar...only if it is a really good steak. Sear the outside at a hot temperature in a lot of butter. Drissel the juice over the steak before adding some sea salt. Decorate the plate with curved lines of the balsamic to dab on each piece.
Medium to well done: Like the above but add a dab of sweet bbq sauce mixed with sauteed onions cooked in bacon. Brushing this mixture on while the steak is cooking gives it a nice glaze.

Medium rare, nice and tender. Left to stand 5 mins so the blood drains then flash fried to warm through!
