Visit Hollywood Rd and Cat Street for antiques - get there on the mid-levels escalator, which is a great experience in itself. Take the tram up to the Peak where they now have a great new viewing tower and new shops and restaurants. Go to the Jade Market and afterwards theTemple Street night market. Take the bus to Aberdeen and Stanley on the other side of the island (great market there too!). Take the legendery Star Ferry across to Kowloon - there you can have tea at the Peninsula (no need to book!), visit the brilliant Hong Kong history museum, shop on Nathan Road. I'd recommend the Harbourfront Bar at the Harbour Plaza in Hung Hom, Kowloon as well - it's a great place to eat and relax (a little out of the way, but it's worth it!)
A trip to Lantau is a wonderful experience as well, where you can visit the Po Lin Monastary and the largest sitting bronze Buddha in the world - you even get lunch there as part of the entrance fee.
It's worth going to Knutsford Terrace - there some great restaurants there.
An excursion into China is really worth it if you have time as well - most hotels will be able to book it for you.
Hong Kong is a fantastic place to go - have a great time!

Oh, I'm soooo jealous! A whole week! I'm a flight attendant, and just did a trip to Hong Kong. It is an amazing place!! But I only had 40 hrs there. Definately go to the night market on Temple St (Jordan stop on the MTR...which is SO easy to use), Stanley Market is good too. Also, Victoria Peak is a great way to see the city from high up, great view!! Plus lots of shopping and restaurants up there. Take the Star Ferry across to Kowloon at night. At 8pm there is a spectacular light show!! Hope this helps a bit, and have LOTS of fun!!
