Tofu Tacos - oh so yummy!
INGREDIENTS
1 (16 ounce) package garden herb tofu, crumbled (if you can't find herb tofu, get regular tofu and add some tyme, basil, rosemary, oregano)
2 tablespoons vegetable oil
1 clove garlic, minced
1/2 cup chopped onion
2 teaspoons chili powder
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/2 lime, juiced
1/2 cup tomato sauce
1/4 cup chopped fresh cilantro
10 medium taco shells, heated
2 cups shredded lettuce
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
1 cup shredded Cheddar cheese
1/4 cup salsa
DIRECTIONS
Over a medium heat fry the tofu, oil, garlic and onion in a large skillet for 5 minutes. Add the chili powder, paprika, cayenne, cumin, salt, lime juice and tomato sauce to the skillet and stir. Cook for 3 minutes. Stir in the cilantro. Spoon mixture in a serving bowl.
Spoon the tofu mixture into taco shells. Top the mixture with lettuce, tomatoes, avocado, Cheddar cheese and salsa.
Tofu Joes
Brown some onions and garlic in a little oil. Crumble your tofu in the pan. Add chili sauce to taste. Servce on brown rice.

I like to throw some firm tofu into a stir fry dish. Just buy a bag of fresh stir fry veggies and start sauteing them - once they've softened a bit, add your teriyaki or soy sauce (whichever you prefer) and throw in the firm tofu cut into cubes. Let the tofu soak up the veggie and soy flavors for a few more minutes then serve it all over rice and top with some sesame seeds.
So easy and tasty.

BBQ TOFU
Chop an onion, fry it olive oil (just a little olive oil). Add the BBQ sauce to the onions and then cut the tofu and add it(extra firm tofu). Mix the tofu with the onions, and viola! You can make sandwiches or eat it with rice.
TOFU SAUTE
Chop carrots, onions, peppers and any other vegetable you like. Fry some extra firm tofu and when it's golden brown, put it in a plate. In the same oil (remember, not too much oil) add the vegetables, soy sauce and then the tofu you cooked before. Serve with rice. mashed potatoes or anything else you like.

Teryaki Marinated tofu & mushrooms -( makes for a great stir fry too)
1 pkg. tofu -not soft
1 pkg. favorite mushrooms or a mixture- shitake are really good in this
favorite Teriyaki sauce
olive oil
onion-sliced
green onions-just tops- dice
ginger - skinned & finely grated
sesame seeds-1 tsp
sesame oil- 2 good shakes-careful not too much!
brown sugar-to taste
Method: soak diced tofu & cut mushrooms -not long maybe about 15 to 20 min
in a wok or med sauce pan- add onions, ginger, sesame seeds, lightly brown-till onions start to carmelize....
put in drained tofu and mushrooms-now put sesame oil-stir as you would a stir fry-cook till tofu is lightly browned and mushrooms are done(to taste). about 15 to 20 min on a med heat. at the very end put inbrown sugar, left over marinate, and green onions-stir in. Serv hot! if you decide to go w/ stir fry -add some bamboo shoots ,water chestnuts ,and veggies of choice and put lid on for another 10 min. stiring occasionally. Serv with rice or noodles

Here's a recipe I got from www.vegweb.com:
1 lb tofu
1/4 cup nutritional yeast
2 tbsp flour
1/4 cup lemon juice
2 tbsp soy sauce or tamari
1 tbsp balsamic vinegar
chopped scallions
a couple of handfuls of frozen Stoplight Peppers (from Whole Foods) or 1/2 bell pepper, sliced
1-2 tbsp capers
Saute tofu on both sides until it starts to brown. Add nutritional yeast and flour and stir to coat for about another minute. Add lemon juice, soy sauce, and vinegar and allow liquid to be absorbed. Add scallions, peppers, and capers and stir until peppers are tender-crisp.
Serve.

I just had a dessert made with Tofu - It was a blueberry parfait. We asked the waitress, and she said they whip up firm tofu with secret ingredients (probably sugar or honey) so it is a nice creamy consistency . This was layered with sweetened blueberries and granola in a parfait glass. It was to die for.
