Well, besides the obvious reasons stated previously, some medications cause dry mouth and since you can't re-moisten or drink in your sleep, it might just be more noticeable.

You're probably a bit dehydrated to begin with and then you sleep with your mouth open.
Some people I know will have a dry mouth no matter how much water they drink but are ok if they have a bit of soda.
I read a very reasonable explanation for that but I'm going to have to look it up.
Or you may have obstructive sleep apnea which causes you to open your mouth to try to breath.
That can be serious, have it checked.

Ive found that my mouth gets dry and hurts when the weather changes, like this morning when I woke up my mouth was dry and scratchy. It has been cool at night here but last night was a little warmer than the past few nights...and this also happened when it was warm out and it got cooler. I also get like this when I sleep in a room where the air conditioning is too cold or the room is too hot/stuffy.

From breathing with your mouth open during sleep. It's funny that you asked this because the past few nights I've been opening my mouth slightly while sleeping. The tip of my tongue ends up all dried out and takes an hour or so to get back to normal upon wakening.

Don't ever take the sleeping pills route!!
1. They will damage your liver big time and you can get into serious health problems.
2. You will get hooked up on them and you won't be able to have a normal life any more if you don't take your pills everyday.

What type of season? All seasons? When I run the AC or heat excessively, or have the register blowing on me, I dry out quickly.
I have a register redirect (home depot $4) that you can redirect it to blow away from you.
As far as humidity, in the winter, I have a warm air humidifier. (walmart $30) A spark vaporizes and cleans the mist as keeps mold to a minimum. It helps keep the air moister, and that also makes the water in the air easier to heat, therefore lowering the amount of heat you have to use to warm a room.
Also, reducing dairy products lead to less mucus. Sometimes that dries you out.
Also, get some plants, and hit them with a mister daily.

Some people sleep with their mouths open during sleep which allow air to enter every time you breathe.

Please overlook some rear-ends like Julius C. I was very interested in your question b/c I also have dry mouth at night. I consciously try to keep my mouth closed, but I guess it flops open 'cause I wake up with my tongue practically sticking to the roof or sides of my mouth. I will be watching your ? to see if we get any serious and helpful answers

All the people above are correct in a way. You could get dry mouth with your mouth closed, as well. It is a treatable condition. Try using Biotene, Oasis, Med oral etc... at bed time.
My husband went through treatment for cancer. Dry mouth is a side effect for that. He preferred Biotene toothpaste, mouthwash,and spray. Med Oral is rx. New is Caphosol, but rx as well and expensive.
