Annie Chuns makes an Udon Noodle Soup bowl that you can fix (http://www.worldpantry.com/cgi-bin/ncommerce3/ProductDisplay?prmenbr=26081&prrfnbr=178592). It's pretty good, and you can get it at Whole Foods.

Try off the shelf noodle sou. Don't add meat. Consult veggie cookbooks too.

any recipe that you see for soup will usually call for some sort of stock( chicken or beef) substitute vegetable stock and add a little extra salt(to taste) and you will have yourself a healthy alternative

i use ramen noodles with a "better than bouillon" vegetable broth.
if you want, you could add carrots, celery, etc. to that.
any noodle would do in fact, just use a veggie broth.

You can buy vegetable broth or vegetable bullion cubes. Then you just add any vegetables you prefer. I like to use carrots, cauliflower, celery and tofu.
