Could be taro but just to nitpick, taro is actually a stem, just like a potato. Not a true root vegetable but I'm sure the chip manufacturers didn't care about botany. Taro and potato are underground stems.
It could also be a purple sweet potato (which IS a root LOL)

I wish you would have mentioned the brand...the ingredient list should give you the contents of the bag...i.e. all the veggies used to make the product. You can use process of elimination to figure it out.
If I were to throw out a guess, it might be the Peruvian purple potato. I realize that when it is fresh, it has a purple flesh but it bleeds like a beet would. Perhaps it looses its color in the frying process?? Otherwise, my more educated guess would be a turnip.

How do you know its a root vegetable?, I think you already know but anyway its probably what the kiwi's call Kumra which New Zealands native sweet potato and yes its a root vegetable.

It sounds like either tarra chips or kolrabi, both of which are delicious. If you can find kolrabi, try it raw-its super crunchy and awesome in salads. It could also be turnip. Again, super yummy raw, and any of these would be healthier than a fried potato chip

???! How are you SURE they were from a "root vegetable"?! I've never heard of ANYTHING else in a bag of chips- that WEREN'T chips!!! Maybe you DON'T WANT TO KNOW what those things were! :0

Definitely taro... here in Miami we call it Malanga. We make a creamy soup out of it that is sooooo good! And we also make mashed malanga... like mashed potatoes.
