Mini stuffed potatoes
24 new potatoes
1 package of herb and garlic cheese
4 tablespoons of butter
Parsley to garnish
Boil potatoes and cook until fork tender.
While potatoes are boiling, cream together the cheese and butter and place in a zip lock bag
When potatoes are fork tender, let them cool until there cool enough so that you can touch them.
Slice a small slice off bottom of potato so that it will stand
Then slice the top and scoop out some of the insides. Then fill them with the cheese and butter mixture.
Then enjoy!
